These cookies are made from whole ingredients and serve as a great alternative to packaged options... Inspired By Sarah's Day Healthier Cookie Recipe!
Makes 9-11 Cookies depending on the size you make them
1 - 1 1/2 Cups of Oat Flour
5 Tbs of Ground Almonds
3/4 tsp of Baking Powder
1/4 tsp of Cinnamon (Optional)
3 Dashes of Almond Milk
2 Tbs of Coconut Oil
2 Tbs of Honey
1 Egg
40g of 75% Dark Choc
1. Pre Heat your oven to 180 (Celsius) Melt your two tablespoons of coconut oil and let to cool
2. Mix your dry ingredients 1 Cup of Oat Flour, Ground Almonds, Baking Powder, a pinch of salt and Cinnamon if using
3. Chop your dark chocolate into chunks and set aside
4. Add your egg, milk and honey to the dry ingredients and mix thoroughly
5. Next mix in the cooled coconut oil
6. Once all mixed in add the chopped chocolate and mix again
7. If the mixture is too wet you can start to add the extra 1/2 Cup of Oat Flour or too dry - add a couple more dashes of Almond Milk
The Mixture is slightly stickier so add some flour to your hands before you roll them into balls
8. Roll the dough into around a tablespoon size and press down flat, then add to your baking tray
9. Bake for 8-12 Minutes Until Golden Brown
Allow to Cool if you can and ENJOY!
